Spiced Apple & Walnut Chutney
makes 5lb preperation time 30 mins cooking time 30mins to an hour.
900mls malt vinegar 450grms light soft brown sugar 900grms cooking apples peeled, cored and roughly chopped 450grms onions chopped 8oz raisins 1oz English mustard powder (Colmans) 1oz ground ginger 2tsp yellow mustard seeds (optional) 2tsp mild curry powder 20grms salt 1 tsp cayenne pepper 4oz walnut pieces.
Put the vinegar and sugar into a large pan and bring to the boil. Then add everything except the walnuts. Bring back to the boil cook, stirring reguarly as it thickens, until it is well reduced and thick- remember it will thicken more as it cools.
Stir in the walnuts and spoon the mixture into sterilized jars, seal with vinegar proof lids. It will keep for up to a year
